No Sugar Strawberry Shortcake

– Use 1 large or several small cakes that are made with muffin recipe – A home-made whipped cream made with vanilla and sweetener to taste – About 3 to 4 cups of fresh strawberries

You can make a big one by using a 9-inch cake pan.

Bake large muffins and split them.

You can either bake six 4-inches ones with special muffin pans or with mini-cake pans, you can also use “Muffin Top” pans.


1. Mix up low-carb muffins while adding 1 teaspoon of vanilla to the batter.

2. Pour the mixture into your prepared pans. Place parchment paper in bottom; it will help the cake come out of the large cake pan, the muffins needs to be greased.

3. You should bake it according to the instructions for muffins. For larger cakes, it may take around 25 minutes, the top should be golden brown and should bounce back when pressed. The toothpick should also come out clean when stuck to the cake.

4. If you want it with artificial sweetener, slice up the strawberries and sweeten them.

5. Whip the cream and flavor to taste.

6. When it cools down, you can split the cake. When you want to layer: Most strawberries should be placed first, then cover it with whipped cream, you can apply another layer and more whipped cream for the rest of the strawberries.

Sugar-Free Chocolate Pecan Torte

The best thing about this dessert is that it can be done in just 5 minutes. All you need to do is to mix all in the food processor!

The Preparation Time: 5 minutes

The Cooking Time: 30 minutes

Total Time: 35 minutes

The Ingredients:

1/2 C water

1/2 C (1 stick) melted butter

1/3 C cocoa

1/4 teaspoon salt

1/4 C erythritol (optional)

1 teaspoon vanilla

2 C pecans (Do not use salted pecans)

4 eggs

Use artificial sweetener equivalent to 1 cup sugar – you can try Stevia as a great sugar alternative

1 t baking powder


1. Must heat oven of up to 350 degrees Fahrenheit. Then, grease an 8 or 9″ springform pan or round pan.

2. Then process the pecans in the food processor. They should not be as fine as as corn meal but they should be at least pulsed.

3. Pulse again after adding the rest of the dry ingredients.

4. Process them until well-blended after adding the wet ingredients.

5. Bake it after pouring it into the pan. You may start checking the time at about 25 minutes and until the toothpick comes out clean after insertion.

6. Cut it when it cools. This dessert is perfect when served with home-made whipped cream (which you can make without sugar).
